For 2, sweat off 1/2 diced onion in 25g butter till soft. Add 200g rice, add salt and stir to coat. Add 1.25l hot stock, 1 ladle at a time, absorbing fully in between, stirring constantly. Finish with butter, parmesan and seasoning.
