Harvested and then roasted over an open fire to develop the deep, nutty flavours Freekeh is an ancient grain made from young durum wheat. Once roasted and the shells have been removed Freekeh can be cooked like rice or barley and can be added to stews, salads or pilafs and even works well as a stuffing.
