Preparation and Usage
A staple in middle eastern cuisine, it is quick and easy to prepare - use a ratio of 1 cup of boiling water to one cup of couscous, add a knob of butter and leave to stand for 5 minutes - fluffing with a fork occasionally. For extra flavour, use vegetable stock instead of water.
Couscous is an excellent accompaniment to chicken and lamb dishes, as well as making a great alternative to rice salad.

200ml Crazy Jack Couscous
50g Crazy Jack Soft Figs, chopped
50g Crazy Jack Dried Apricots, chopped
30g Crazy Jack Pine Nuts, toasted
30g Crazy Jack Flaked Almonds
2 tbsp flat leaf parsley, chopped
200ml boiling water
25g butter
1. In a large bowl, add the water and the butter to the couscous, mix lightly until combined. Leave to stand for 5 minutes.
2. Meanwhile, weigh out the rest of the ingredients.
