Herby Mushroom & Garlic Pie
Flavour kit
3 sheets filo pastry
250g chicken thigh fillets, diced into approx 3 cm pieces
150g button mushrooms, sliced
150g crme frache
1 leek, sliced
3 Sheets filo pastry
Simple Swaps
Top with mash instead of filo pastry
Make it vegetarian by replacing the chicken with cannellini beans
Prep time 10 mins
Cook time 20 mins
Preheat oven to 220C/Fan 200C
1 Heat 1 tbsp oil in a frying pan, on a medium-high heat, brown the chicken for 2 minutes.
2 Add the leeks, mushrooms and herby garlic seasoning, mix well and fry for 1 minute on high heat.
3 Mix the mushroom paste with 50ml of boiling water, add to the chicken mixture and bring to a boil. Cook for 3 minutes.
4 Turn off the heat, stir in the crme frache and pour the mixture into a deep ovenproof dish approx 20cm x 15cm.
5 Tear each filo sheet in half, lightly scrunch up and use to top the pie.
Brush with a little oil and bake in the oven for 12-14 minutes until golden.
